「校園綠色廚房」屬於環境教育課程,透過生活式教學之實際體驗與行動,以最基本的生理需求「吃」為核心,設計「健康餐桌」、「友善環境的農田」、「全球環境議題」等學習路徑,傳遞給學生簡而易懂的「對環境友善」及「讓自己健康」二大主軸,散播「綠色種子」,將健康、環保的觀念帶至校園的每個角落。課程內容包括室內教學、下田耕作的田園學習、廚房實作、以及有機農場體驗等四個部分。學生透過在田間實地觀察、瞭解農夫進行對環境友善的有機無毒栽種方式,包括不使用含硝酸鹽與氮過高的化學肥料以避免土壤與水體過度酸化、以及不噴灑各種干擾環境的除草劑與殺蟲農藥;接著再到向農友分租約300坪的有機學習田地中,實際動手體驗農人栽種的困難與辛勞。廚房課程則包括食材來源與生產過程介紹、食材分配和分工處理、日常健康烹調教授與學習、共食與清理等,強調食物里程極短的在地食材、友善環境和健康的生產過程,學習選擇健康、原味、少化學添加物的飲食,以及養成備餐能力等。
